The recently launched Worksharp Professional Precision Adjust has once again been a winner for the folks at Worksharp Tools. When they launched the original Precision Adjust it totally changed the way that people sharpened knives. Quoting from Worksharp Tools website:-

A lot of thought was put into The Worksharp Professional Precision Adjust and it has added many improvements over the original Precision Adjust. Again quoting from the Worksharp Tools website

The hinged base allows for the easy rotation of even large knives. It’s possible to just rotate small blades by pressing the red release button without using the hinge feature. To do this though the support must first be removed which means your fingers getting really close to the edge of the knives. Using the hinge and rotate feature means that the support stays in place and the rotated clamped knife just comes to rest back on the support.
The common handle is magnetic and screws into place. The abrasive plates then just magnetically attach to the handle making progressing through the grits very easy. Before rotating the handle slides into a holder keeping it out of the way which is a great feature.
The electronic angle guide assist in making sure that the correct angle is set. This can change depending on where the blade is clamped making the electronic guide more accurate than the mechanical measure indicated by the white arrows.
We used the Worksharp Professional Precision Adjust to sharpen everything from a medium sized Honey Badger Wharn Cleaver all the way up to an 8″ chef’s knife. It is a much more solid and stable unit than the original Precision Adjust and the results speak for themselves. One slicing chef’s knife we sharpened to 17 degrees per side and went all the way down to a polished ceramic finish. The other 8″ chef’s knife we stopped at a toothy 400 grit and just finished it off with the leather strop.
